Jellymaster®

This system is designed for the continuous cooking of any
jelly masses & marshmallow based on gelatin, agar-agar,
gummy arabicum, pectin, modified & natural starch.
A cooker, specifically designed for jelly products, is a
compact heat exchanger in the form of a bundle of pipes featuring
a large heat exchange surface. In combination with a vacuum
plant & a large vacuum chamber the cooker is integrated
into a hygienic frame structure which is a system of high-grade
steel pipes having the capacity within the range of 1000 -
5000 kg/h, provided with the system pressure control by means
of a pneumatically-driven reducing valve, the automatic control
of the cooking temperature, pneumatically-driven 3-way valve
with a return pipeline to the date tank.
The electrical part of all Jellymaster® assemblies is synchronized
& is operated from the control system.
The first-in-first-out principle & a specific construction
of heat transfer elements guiding the mass flow inside the
cooker ensure an optimum heat transfer & minimum thermal
load onto the product.
The cooking equipment for a modular line consists of weighing
of the recipe ingredients at the Autograv® weigh station,
continuous suspension feed to the Jellymaster® plant,
the Jellymix® device for the automatic dosing of flavoring,
coloring agents & acids.
Using the Tornado® beater operating under pressure it
is possible to aerate jelly mass thus producing combined products
from jelly & marshmallow employing various coloring &
flavoring agents.
