Chocolate coating production

General Information

Chocolate coating is a finely dispersed mixture, consisting of the cocoa powder, cocoa butter and powdered sugar. Flavoring and aromatic additives are included into the coating in addition to these main components. Milk powder, cream powder, grinded nut kernels and other components are used as additives. Vanillin or vanilla essence is included into the coating as flavoring. A small amount of lecithin is added for liquefaction. Plants, based on ball-type mills, are widely used nowadays for chocolate and chocolate coating production.
